This is a super healthy and easy meal that you can throw together early and have on the go. Use leftovers or prep the ingredients early in the week to make things easier. If you don’t do meat, simply add extra beans and skip the chicken. Make it more filling by adding on extra veggies of your choice (I like bell peppers and greens), or serve with a side salad. Enjoy!
