Super easy marinade recipe that you can use on just about any fish. I love these kinds of meals for the nights when you want to eat healthy but just "can't" with all of the fuss over some recipes. The original recipe calls for Pollock, but just use any fish that you like. This would be great on shrimp or scallops as well. Serve with your choice of Rainbow Veggies and possible a simple rice pilaf if that fits your plan.
1. Thaw fish if it isn't, and then pat draw with towel
2. Put the thawed fish on a baking sheet lined with parchment paper or a Silpat mat.
3. Mix the rest of the ingredients and spread on the top side of the fish. Let stand for 15 minutes.
4. Place fish and baking sheet in the oven, about 4 inches from the heat. Broil for about 10 minutes, or until the fish flakes easily with a fork.
