I have a dream of some day traveling to New Orleans and indulging in the local cuisine for the entire trip. No diets, no restriction – just days of yummy eating. Until then, I try to make do with Cajun-inspired meals at home.

This simple salmon recipe is one of them. No, it’s not red fish caught hours before it was served to me, but it will do.

Serve with a veggie side and possibly a potato or even some rice and beans (if you’re needing some extra carbs for the day). Simply and delicious – enjoy!

Cajun Salmon
  1. Preheat oven to 350°F.
  2. Line a baking sheet with foil and spray with olive oil cooking spray.
  3. Spray peppers and onions with olive oil, place at one end of baking sheet and place the salmon at the other end sprinkled with Cajun seasoning.
  4. Bake for 20 to 25 minutes.
  5. When it is done, salmon flakes easily when tested with a fork.
  6. Drain and serve drizzled with extra virgin olive oil and a little salt and pepper.
  7. Tip the salmon with peppers and onions
