Low Carb/Low Fat Chili
This is a great chili option for those cold winter days. Low in carbs, and can be made lower by taking out the sweet potato, or add some kale for an additional net carb benefit. Pair with a salad for a complete meal.

Instructions
  1. Step 1: Heat oil and Brown beef and onion in a large pot or using saute setting on Instant Pot
  2. Step 2: Add salt, pepper, and the rest of the spices. Stir to coat meat mixture.
  3. Step 3: Add veggies on top of meat. Then add tomatoes - you can choose to keep them diced or puree them.
  4. Step 4: Add beef broth and stir everything together.
  5. Step 5: Stove Top: Bring to boil and then reduce to simmer. Cover and cook for 1-3 hours.
  6. Slow Cooker/Instant Pot: Add lid. Cook on "slow cooker" for 4+ hours
  7. Instant Pot: Add lid. Set on "manual" for 20 minutes. NPR.
