Mason Jar Cobb Salad
This is a great pre-prep lunch that will keep you eating healthy even where there's no time to cook. This recipe makes 2 jars, but feel free to double it or even get creative with the ingredients to have salads for te week.

  1. Pour 2 Tbsp of dressing into the bottom of each jar
  2. Add 1/4 cup of garbanzo beans to each jar
  3. Split bell peppers, carrot, and cucumber between the jars
  4. Add turkey (2 oz per jar), egg (1 each) and avocado (1/2 per jar - slice into cubes while the "meat" is in the skin and then spoon into the jars)
  5. Split red cabbage between the jars and place on top of the protein
  6. Finish by adding in the lettuce. Use as much as you'd like, preferably to fill the jar to the top. To keep the ingredients as fresh as possible, make sure you're packing in the lettuce and filling to the top.
  7. When ready to eat, simply empty everything onto a place or bowl. Toss and enjoy!
