I have issues with IBS and bloating, and so finding recipes that help my gut heal and reduce symptoms is key. I’ve adapted this recipes slightly from Agalee Jacobs’s book Digestive Health with Real Food. I highly recommend it if you have an GI flares and are looking to improve your digestions – even if you have recurring pain, then this would be a great place for you to start.

This recipe is for fritters, but it you’re like me and your frittters don’t stay together as well as you’d like them to, it also makes a great scramble. No shame there – it’s still edible and really tasty.

  1. Grate the zucchinis and put them in a large bowl
  2. Add the eggs, onions, coconut flour, nutritional yeast, and seasonings to taste. Mix well.
  3. In a skillet, heat the oil or tallow. Add about a quarter (1 ice cream scoop) of the mixture to the skillet. Cook a for a few minutes or until the bottom is cooked. Flip and cook 1-2 minutes on the other side.
  4. Repeat with the rest of the batch.
  5. Serve warm or refrigerate and save for tomorrow.
